What is the most beneficial organ meat?
Of all the organ meat products, liver is the most potent – in a good way.
I call it the king of the organ meats and recommend that liver should be the first organ meat to be included in your diet over other organs.
In fact, liver is so rich in vitamin A that it’s recommended to only consume it 1-2 times a week. That said, you would struggle to find any cases of anyone getting ill from overconsumption of liver.
Do organ meats contain vitamin C?
According to the USDA, there’s no vitamin C in any meat, whether that’s muscle meat or organ meat. However, it’s believed that vitamin C wasn’t tested for and was assumed as not present.
There have since been studies that suggest otherwise with more than enough vitamin C in muscle meats, especially grass-fed, and plenty in organ meats such as pancreas, brain, and kidneys.
